  2. My husband and I REALLY love yogurt and wanted to take your community ed class in Aug but have a conflict. Have you eaten the Greek God yogurt? We are in LOVE with it and are hoping the homemade is similar to it (only better:) We also love mozzarella cheese so will take that class, but am wondering if we pay you for the yogurt class, could we get the recipe and “know how” even though we can’t attend? Also, can we purchase duck eggs from you directly? We live in Lindstrom. Thanks so much. Really like what you are doing. LaRae & KIrk

  3. Hi La Rae! Thanks for all the support and kind comments!
    The only thing that makes Greek Yogurt “greek” is straining yogurt through a fine linen-type fabric overnight, you remove the whey and it turns into divine thick goodness, as you know. I’d be happy to hook you up with my instructions for the class when I see you at the mozzarella class! Or you can google “fankhauser cheese page” and find all you need to know about making yogurt and all kinds of goodies.

    Congratulations on your move.

    I signed up for your peaches class on Wednesday night. I missed it because I became sick from the heat and humidity. I did not have any information to call to let you know. I am feeling better now. So, I would like to know if you are going to teach another class about it. Or if I could call you about some of the problems I have had with trying to can peaches.

    I came out with Laurie Schneider in late May for goat soap making. I brought a young man from Korea with me.

It all sounds so very exciting and I can only wish you the best of success with all your projects. The reason that I am writing is that I have a friend who raises goats and is looking for a “man” goat. She probably has 2 or 3 girls. I am not sure if this is something that you do. Ducks eggs, goat’s milk, fresh garden veggies, all free range, raised with love, sustainable farming, nutrient-rich focus, and no pesticides or chemicals… Do you ever offer raw goat’s milk to interested customers?

  10. Hi Stephanie- thank you sooo much for all your kind words. Unfortunately in WI we’re unable to sell goat’s milk. MN has it in their constitution that a farmer can sell the products of their farm directly to customers, but in the Wi Dairy state, it is much more regulated. We’re still formulating our 2012 CSA, and look forward to being your farmers, if our offerings fit your needs. Thanks again!

  22. From article in Wis. State Journal 111111- I did not see or perhaps missed that duck eggs can usually be tolerated by folks w/ chkn egg allergies – that would be me. My supplier (100 mi. RT – $3.50/doz) said their ducks have ceased egg production. We would be willing to pick up duck eggs – fresh or frozen – from your farm ( 6-8 doz. depending on price) on Wed. Nov. 23 afternoon. We are traveling to Shell Lake for Thanksgiving. Thank you, Judy Buser ( I seem to be unable to find your direct email address other than this ‘reply’ box. ) Hope you get this!     Hello!
    We read the article about you in the Journal on Friday. We live in near-western WI, out in farm land & are trying to become self-sufficient. We’re putting in a chicken coop next year & would like to have some hens (no drakes) as well. Since khaki’s were the ones we were thinking about, would you be willing to sell us about 4? We could be guaranteed of hens that way, instead of going through our co-op & not knowing. As I said, it would be next year, probably spring, before we’d be ready. We raise Cornish Rock chickens for meat, but want to get some unique chickens for layers, maybe some Polish crested & Araconas for fun & then some Leghorns for our main birds.     I tried to send an e-mail to: farmers@ltd.com – but it bounced back. So, I’ll try posting here: We have a son just recently diagnosed with an egg food sensitivity and have been very successful using your duck eggs instead of chicken eggs. However, we are panicked to hear that we may no longer be able to buy them until Spring. (Silly us – we thought they would be available year-round, but have traveled the co-ops, and even Heartland market, with no success.) My son is also gluten free and we have found a bread recipe he actually likes – but, of course, it needs eggs!

    Does the duck egg production literally stop – or just slow down? We would be very interested in buying some direct from you. We typically buy 4 dozen at a time, but could buy more as I am learning they can be frozen. We live near Stillwater, MN. Please let us know if we can buy direct from you – or if you have any other suggestions.

  31. I have 5 chickens and one Welsh Harlequin duck who is in charge of the flock. :) She was laying a wonderful duck egg a day until late August and has since not layed at all. She began molting in the fall and seemed to stop molting by December. There is a heat lamp in the coop that turns on at 5:30 -7:15 am to give them warmth and longer light to their day. They have a large outdoor pen and have been able to roam the yard this mild winter; yet still no duck eggs for 6 months. I really miss the duck eggs and love to bake with them. Have your ducks not layed for such a long period of time? Any thoughts? Thanks for your input. Love your site!

    Travis, from the Mississippi Market, said that I might be able to purchase fertile duck eggs from you. I do daycare and I am trying to find duck eggs that we can hatch this spring. If you are able to help me Travis said you could deliver them to him. Please let me know soon. We would like to get started on this project. I have hatch chickens in the past, but the kids would love to do ducks this year.

  38. Hi Randy- we’re not going to be doing any butchery courses this year, as we’re taking a year break from pigs. Check out Farmstead Meatsmith’s online butchery videos, they are PHENOMENAL!!!!!!
