Confessions of a Duck Egg Addict
I met Khaiti at River Market’s CSA event where she was promoting a share of two dozen duck eggs and two bars of goat milk soap a month. Although I had never eaten a duck egg or considered an egg share I was drawn in by the curiosity of it all and some good karma. Before committing I asked to try one. A few days later I had a couple of stunningly gorgeous thick-shelled almost opalescent eggs cupped in my hands. I knew I was holding real food; the freshest eggs layed by healthy happy ducks living outdoors as nature intended. The eggs have an amazing eggy flavor and texture. They have a density and thickness that bespeaks of health and makes chicken eggs pale in comparison. After one fried duck egg on toast, I was hooked. Each egg is like an egg and a half making it the perfect portion size. I am now patiently waiting for the longer days of spring when these happy quackers start producing again.
The goat milk soap was another wonder. I had enough from my share to last the winter and to give as gifts. The big surprise was when I had the ‘ah ha’ moment and tried if out as shampoo. It works great, so no more plastic bottles with unrecognizable chemicals. One look at Khaiti’s hair and I should have known.
I was one of the lucky few with the honor of roasting a couple of ducks from Khaiti’s farm. These were the male ducks from the eggs that were hatched to increase the flock. They were raised with love and harvested with compassion and were one richest, most flavorful food experiences that I have had. I have Khaiti to thank for a summer of eating food that is delicious, healthy and locally raised!
