pig butchering class
This workshop is on October 16th.
Want to learn what 1/2 a pig looks like, and how to break it down into the familiar cuts? We’re harvesting one of our wonderful pigs and will chill the carcass down for several days before the workshop. Then we’re going to demonstrate butchering an entire pig, including grinding sausage and stuffing fresh bratwurst into authentic pork casings from the pig we’re butchering. There will be a sampling of the headcheese & fresh liver pate. Charcuterie methods will be discussed and demonstrated. A unique & incredible experience to be sure.
Our pigs are raised with love, respect and excellent care. We have just one more pig available for 2011. Email us for details.
