The LTD Farmhouse, come learn homesteading skills in the country with us!

L.T.D. Farm “living the dream,” run by Khaiti Kahleck and Andrew French, is located an hour and half east of the Twin Cities in Clayton, Wisconsin. We raise animals and vegetables on a small scale, as part of our diversified, sustainable Permaculture farm. L.T.D.Farm’s mission is to connect our members with the food we raise and they eat, and share various skills through workshops. We want everyone to be living the dream, or learning how to! Our farm is open for any custom class ideas you may have, or for private group events.

Making Meat Matter- Goat
AT L.T.D. Farm, we believe animals and their meat should be greatly respected. Part of showing respect to life, in the form of nourishment, is to use every bit of the animal you’re eating. We’d like to show you our point of view and ways we prepare and utilize almost every part of a goat.

The morning of this workshop, we’ll be harvesting one of the male goats, going from a peaceful and humane end, through the entire butchering process. An intensive class, but sure to be something you have never experienced before.After demonstrating methods for using goat meat and preparing several dishes, we’ll close the class with a delicious curry dinner. $100 per person. Old Fashioned Goatmilk Soap
Come learn how to make Old Fashioned Lye Soap with Khaiti, using our own fresh goats’ milk, vegetable oils and essential oils for light scents. She’ll talk about all kinds of cool add-ins for texture, visual beauty and share all her
special tricks. Go home with your own bar of homemade soap as a souvenir! $20 per person, please RSVP. In case of inclement weather during this time of year, the class will postponed. Please note this is held on Easter Sunday.

Come learn the basic principles of Permaculture, a comprehensive design-centered approach to all aspects of sustainable living. Andrew is a certified permaculturalist and he will teach you the basic design principles and
methodologies of this world-wide movement. A large portion of the day will be reserved for field work. Be prepared to get your hands dirty and your mind full of new ideas.
This is a unique opportunity to learn about this exciting new field on a real working permaculture farm. We are learning and growing here every day! We will provide a basic lunch and beverages. Please bring gloves, bug spray, water container, hat, work boots, shovels, snacks, and any other gear that will keep you comfortable outside.
$50 per attendee

Special Mother’s Day event- Soap Making with LTD goodies!
Looking for a unique gift/event with mom for this special day? Come to LTD Farm with your mom, and together you’ll learn how to make Old Fashioned Lye Soap with Khaiti, using our own fresh goats’ milk, vegetable oils
and essential oils for light scents. She’ll talk about all kinds of cool add-ins for texture, visual beauty and share all her special tricks. Everyone goes home with a bar of homemade soap as a souvenir! Come learn what it takes to milk goats, care for them, feed them and handle their basic needs. We’ll make some simple cheese from their fresh milk, after hanging out with the goats and asking them lots of questions! $40 per person or $60 per family. Please RSVP.

Home Brewing and Fresh Cheese Curds
A Double Feature!
We’ll be brewing extract beer and showing you all the steps involved in person, instead of reading about it in a book! While we’re boiling the wort, we’ll make some fresh goat cheese curds to go along with the sampling of homebrew after all the work is done. $40 per person. Sound too good to be true? Nope- we’re doing it. And you will too. Making fresh mozzarella cheese from SCRATCH. Demonstrating some tricks to making the best pizza crust ever. Some simple toppings, highlighted by goats’ milk mozzarella. And of course then…..we’ll eat! A special gift experience to give your Dad. $40 per person or $70 per family. Please RSVP.

Fresh, Local Jam Making
Using the bounty of early summer fruits, learn how to transform these delicious gems into something you can savor all season. Jam highlights the texture of the fruits, by using the entire fruit, not just the juice. Lower sugar options will be discussed as well. We’ll demonstrate the entire process, including safely canning jam for preservation. Homemade jams make extra special gifts as well. $30 per person includes a fresh jar of jam to take home with you! Fermentation Workshop
We’re gonna make Kimchi! Let’s go out to the garden and find all kinds of delicious, crazy things to put in our special batch, and then we’ll explain the whole process as we show you how we do it. You’ll be inspired to start
experimenting with the local bounty in your garden, @ the farmer’s market, or from your CSA box. Other types of fermenting vegetables will be explained as well. $20 per person, $35 per family

July 9th

Homestyle Wine & Fresh Pasta
Khaiti’s mom taught her the simplest way to make homemade wine from the fresh seasonal fruits around you. She’ll share this method, plus a tasting of some of her own. Then we’re going to make fresh pasta, and demonstrate the difference between using a machine, and handrolling it – rustic style. Together we’ll make some simple sauces to highlight the textures and flavors of really fresh egg pasta. And we’ll eat………..followed by a farm tour. $40 per participant, please RSVP.

Turkey Harvesting
As we did last year, we’ll be raising a few turkeys to be harvested mid summer. Whether you can’t wait for Thanksgiving, or want to make a bunch of turkey breakfast sausage and burgers for the freezer….July 10th is the day we harvest the summer turkeys. Interested in a summer turkey? Please let know ASAP, as we’re only raising a few birds, as reserved with a $20 deposit. Want to come learn about harvesting and help with the process? You’re more than welcome to come out!

Old School Cheesemakers Course
Want a more intensive cheesemaking day, where you’ll learn how to make many different kinds of cheese? Here it is! In this workshop, we’ll make blue cheese, feta cheese, indian paneer, a simple hard cheese to age, as well as fresh mozzarella.
This will be a special workshop, with a farm lunch served to attendees. Time permitting, you’ll even get to watch us attempting to make cheddar cheese which has kept us baffled for some time. We’re not fancy out here, just very
practical. We use what we have and learn how to do without the expensive ingredients required by some techniques. Some cheesemaking supplies may be available for purchase at the workshop. $80 per person.

Chicken Harvesting
This is the day we’re planning to harvest and process the beautiful chickens we’ll be raising exclusively for shares. We can use help, so if you want to come learn and lend a hand, please let us know.
See our “Chicken Share” listing under the CSA menu if you’re interested, the deadline is April 20th to get on the list. There will also be a later summer batch of chickens available, email us for details.

Pickling Green Beans and Beets!
Green Dilly Beans are one of our favorite jars to pull out of the pantry in the dead of winter for a crunchy, summery snack. They make a party-pleasing appetizer or a wonderful, thoughtful gift. Utilize this time of year when green beans are locally plentiful to can up a whole bunch of jars. Pickled Beets are almost a relic of the past, but most of us have very fond memories of these delicious treats served at summer potlucks. We’ll go through the whole entire process of making the brine and seasonings, to safely canning. You’ll get to try some of ours, made last year, to see how beautifully these pickles keep once canned. $40 per person.

Wonder how to hold onto all the freshness of the local harvest season? Fresh, homemade salsa, canned up safely for the winter, is a great way to do that! We’ll go through all the steps of making the salsa, and Khaiti will demonstrate her various techniques and tricks to do it more easily. We’ll start with fresh produce from the farm and end with gorgeous gem-like jars of salsa. Fruit variations will be discussed as well! $20 per person, $40 for families.

Everyone should learn how to can tomatoes! It is so simple, cheap, and makes the best use of the local bounty. Another benefit is once the tomatoes are canned up, you save space in your freezer for energy free storage. We will process several different methods of canned tomatoes, so you can find a variety you like best. Khaiti will explain what is safe to use for water bath canning, which is the easiest technique for home preservation.
